Weiß jemand, wie man diesen Teil des Wasserhahns öffnet, um ein Bidet zu installieren? Ich kann ihn nicht einfach drehen, der ganze Wasserhahn bewegt sich und ich möchte ihn nicht versehentlich kaputt machen.

Do You mean the sieve insert? Use a variable wrench (frenchman) or pump pliers /w a piece of rubber to unscrew.
This part is called „Perlator“ or „Luftsprudler“ in German, get a new one online or at „Baumarkt“ (home depot). Check twice for correct size, these come with internal or external threading.

I bought the Kunststoff Serviceschlüssel blau M24 from an OBI store, if you have a store nearby then buy it yourself.
Is the shower far away? I have installed the bidet to the shower and is much easier and neater.
Are the pipes below the bathroom sink accessible? I installed a bidet there, bought an connector 3/8 – 1/2 -3/8 inch and attached the hose for the bidet to the 1/2 inch slot. Looks „cleaner“ than the cheaper looking version imho 😅.
