I think the initial idea was literally that you could drive (auto) to a walking (pédestre) tour.
It means you park, you walk in a loop, you get back to your car. Some of them are good for bikes, but they’re primarily walking trails (at least the ones in the big book).
There are also „TrainPedestres“, Hike and Rail, from CFL where the hiking trail starts near a train station.
With a gravel bike you can usually do all of them. On a road bike certain parts on certain tours are not ridable.
