Wie kommt es, dass ich am Wochenende Absage-E-Mails für Stellen von verschiedenen Unternehmen bekomme? Arbeiten Recruiter oder Einstellungsteams am Wochenende? Insbesondere sonntags nachts zwischen 18:00 und 23:00 Uhr.

Does the answer matter? Like if I’d tell you: „Yes, they do work on weekends“ or „No, they work on weekends“ what does that change in your future approach?
In any case, to actually answer:
Sunday is a day in which in Germamy (!) generally no work is done, and there are legal limitations to work then. It could of course be that the companies you have applied to have outsourced their recruiting or have recruiters outside Germany (different time zones, different legal and cultural frameworks, etc.)
