Kann mir bitte jemand erklären, was das auf meinem Ticket bedeutet? Ich hatte ursprünglich einen TGV-Zug, der gestrichen wurde, aber auf meinem Ticket steht jetzt, dass ich einen ICE-Zug nehmen kann? Oder muss ich einfach ein neues Ticket kaufen?

Boarding a TGV train in France is only possible with a reservation valid for that particular train.
While the ticket itself remains valid for any alternative train, in order to be able to use it, you must visit a service counter and get rebooked to a new train.
EDIT: And as to why it says „ICE“ on the top: That isn’t new with the train now cancelled, but expresses the train category: „ICE“ for highs-speed trains (even if actually good for a foreign high speed trains with a different name such as TGV or RailJet), „IC/EC“ for other long-distance trains, and neither of the two for local trains only.
DB App is a complete mess.
At the bottom it says „Zugbindung: Gilt nur für eingetragene Züge“ which means that your ticket is only valid for the listed connection (see „Verbindung“ -> TGV 9551). But: If your connection gets cancelled you can take a another DB train going in the same direction (I believe TGV always require seat reservation).* However, I don’t know whether this also applies if the original train was a TGV.

*edit: Some international connections may require a specific reservation (like TGV does) during Football Championship.
