Yeah ricotta is somewhat common in the South of Italy. Personally though there is only one lasagna and it’s the one from Bologna. Perfection doesn’t need improvement

I wonder why ricotta is so popular in Canada and in the US, considering it’s an italian cheese (and that béchamel is better)?

I’m in Australia and have never had lasagna with ricotta but I would happily give it a go. Sounds like it might be nice. Might go better in a vegetarian lasagna.

I’m just trying to figure out who the heck is making enough lasagna in Kenya to get put on the list. You can’t find cheese, any cheese, outside the cities, much less something as specific as ricotta/bechamel. Heck, you’re not even going to find noodles other than spaghetti or instant ramen either. It has to be western diaspora in their Nairobi enclaves.

A perfect bechamel .. slightly sweet, with a touch of sea salt and nutmeg (and NO onions).
There is just nothing better than that.

I would have expected more mixed or at least ricotta countries, like in south America I thought immigration from Southern Italy was common enough to have a greater impact than the recipe spreading. Maybe it happened after bechamel became more common in the south.
