Not having height as the Y axis makes this not beautiful.

Midfielders and forwards being smaller makes sense because you need to be better at dribbling and ball control for those positions, and have a lower centre of mass helps with stability
You can see some people lie their height. Clearly, some of those that claim 180cm are less than that.
Why the weird spacing within groups on the same height?

makes no sense to put central backs and fullbacks/wingbacks in the same basket

this is a very small difference between the groups, because you divided them by their vertical position.
i suggest looking at the player’s position as distance from the middle line going from one goal to another and comparing the heights.
basically, the closer to the center, the taller the player. e.g. wingers are usually much shorter than strikers. both groups are forwards. fullbacks are shorter than centerbacks. both are defenders
