

Gamarjoba! Ich habe gelernt, dass man Khinkali mit den Händen essen und den obersten Knoten (die teigige Spitze) auf dem Teller lassen soll. Aber gestern bin ich in Kazbegi essen gegangen und mir wurde Khinkali serviert, das ich oben nicht richtig festhalten konnte.
Ist das Absicht? Soll ich es trotzdem mit den Händen essen? Oder ist es vielleicht regional?
Und wie wäre es mit Khinkali mit Kartoffeln (zweites Foto), die eine andere Form haben?

You should hold it sideways with your thumb resting on the tip and the the rest of your fingers cupping it from underneath
There never is a prominent top knot (it’s called intestine in Georgian, don’t ask me why) when they are handmade. The top comes from the machine, folding them.
Grab them with one hand, hold vertically, take a bite, sip broth, eat rest.
I slide a fork in the top and flip it upside down.

Same way, knot is not for holding it.
You are not supposed to do anything in any particular way. You should eat in a way that gives you most pleasure. If you want juice all over your plate, khinkali dangling on a fork, and meat falling out, go ahead and fork; If you want to eat the tip, go for it.
Grab it with claw-grip in your palm facing up, tip down, bite, chug the juice, bite the rest of it.
You can eat whole thing. I think keeping the top is more of a bragging thing than anything „look at how many I ate, I am maximum man“
Stick a fork in the top knot, eat happily.
