Denn schließlich haben sich mehrere Systeme gleichzeitig angeglichen:

    • Chili flakes (gochugaru, 고춧가루) → by the late Joseon period, widely adopted, helping control fermentation with antimicrobial effects
    
    • Fermented seafood (jeotgal, 젓갈) → expanded in the 19th century with the growth of coastal fisheries, adding amino acids and deep umami
    
    • Napa cabbage (baechu, 배추) → introduced from Shandong in the mid-19th century, forming dense heads ideal for layered kimchi and winter storage
    
    • Steamed rice culture (ssalbap, 쌀밥) → became more stabilized and widespread, creating the perfect neutral base that made kimchi essential as a flavor counterpart
    

    Davor gab es Kimchi – allerdings meist als einfacheres Salzgemüse oder nicht scharfe Gurken.

    Modernes Kimchi wurde erst möglich, als die Fermentationskontrolle (gochugaru), die Umami-Chemie (jeotgal), die Kohlstruktur (baechu) und das Reismehlsystem (ssalbap) zusammenkamen.
