There are other emails that are far more convincing that they are encoded. These ones feel quite literal and mundane.

This is definitely weird. You can make a number of assumptions about what they are talking about. The fact that they mention „colors“ of shrimp/sharks is weird. It doesn’t seem like they are talking about actual food and it makes me think that they are using „shrimp“ and „shark“ as a code word for something. I have never even heard of black shrimp, white shrimp, or shrimp that is too pink, unless it’s some kind of rich people shrimp that my poor ass can’t access.
I can say that I thought the shrimp idea got debunked when another user mentioned that „shrimp“ was another word for a „butterface.“ However, now that I see this, I am more inclined to believe that it is a code word. I just need more evidence. There’s a lot of information floating around and we need to make sure we figure out what is what.

These people communicate using euphemisms. It wouldn’t call it “code”. It comes across far more basic than that.
The question is whether the choice of euphemisms have anything in common with the true subject, or if it is far removed. Obviously seafood analogies have sexual connotations that seem obvious and flaunting when we read them in this context. We should also consider non-sexual obfuscation.
For the one exchange, my guess is that „sharks“ was code for prostitutes.The age of the prostitutes not clear from context.
