It’s called a ’skigard‘, look it up in norwegian and you’ll surely find something.

There is a lot of museums, historical association and other local places that give courses.
Also you could buy the „byggforskserien“ that explains how to with examples.

You need to pay to access the full thing. But the basic idea is very simple. Poles in the ground, something to connect them and then the pieces of wood resting between.
The hardest part might be to find places that have these types of woodcuts.
If you learn to make it good. You can earn a lot of money. Those who set it up for people earn loads.
