Falcon 9 stage seperation, the second stage is designed to burn up in the atmosphere and it creates this really cool effect, once starship is fully functioning and tested this should stop happening as it’s designed to be fully re-usable.
Edit: also heard from people more qualified then myself that it’s actually it just dumping fuel in orbit

Between 6 and 7pm, 4 flights went over Cavan.
Belfast to Shannon at 18000ft
Edinburgh to Shanon at 18000ft
Frankfurt to Atlanta at 32000ft
Nottingham to Cincinnati at 32000ft
