Bei so vielen ähnlich aussehenden Optionen werde ich oft gefragt "Wie kann ich sicherstellen, dass ich echten, authentischen bulgarischen Käse bekomme?" Und ich sage es ihnen immer "Wenn das Paket keinen möglichen Krankenhausbesuch beinhaltete, ist es einfach nicht das echte Angebot."

      I don’t think real cheese is that white. Milk from cows is yellow due to high butter content, therefore both main types of cheese (sirene, kashkaval) would be some type of yellow.

    2. This cheese is not very popular in Bulgaria (cow’s milk + sheep’s milk mix). The most consumed nowadays is made from 100% cow’s milk. A distant second are 100% sheep or goat’s milk and only then the 70/30 or 80/20 cow/sheep mix. But we used to have over 11 million sheep in 1989 compared to just under a million today, so products from sheep’s milk used to be much more common….
