We’re fasting Wednesday and Friday as well. Beans and lentils are always on the table, never leaving the menu.
Summer is coming, I can’t wait for green beans, aubergines, courgets, fava beans, okras garden tomatoes, peppers and cucumbers.
To be honest white cheese is the only non fasting food that I miss.

My wife and I are vegan, from the US, and I was so pleasantly surprised to find out that countries like Romania with large orthodox populations actually just have so much fasting/lent food available which is frequently totally vegan. You get to actually have local cuisines and not just another veggie/beyond burger yayyyy
