Just in case, you didn’t know … the fact that you’re employed by a UK company is irrelevant. If you’re working in Ireland you’re still entitled to a day off or an extra day’s pay.
Maybe you get another day off later on, like Good Friday. That’s allowed too.

And they only pay us Sunday hours, which is an extra 20c per hour.

For everyone working, you still get a day off. Either later or compensated pay.
Also you should ask your employer in future which of the 4 option they are giving you 21 days before the public holiday

Extra day of annual leave
Paid day off within the month.
If they don’t respond with 14 days of the holidays, you are legally protected to take the day off.
