The goal of identity documents is to bind your name (and ID card number) to properties you can not change (because they are biometrics: face and fingerprints, or events or properties in the past: mother’s maiden name, date of birth) so you could be uniquely identified.
Biological sex (unchangeable with current technology) is/was (somewhat) useful for that purpose, but don’t see much benefit putting a changeable „legal sex“ field on identity documents.
If using (assigned) biological sex is no longer desired, I think the next step should be getting rid of any type of sex/gender on official documents altogether (and probably solving a few more issues) instead of inventing a „legal sex“ that could cause more issues (probably many system assumes it to be immutable) without much benefits.
