Not really surprising given that Tokyo probably has a higher population than many (most?) countries.

Tokyo or MetroTokyo? MetroTokyo has more inhabitants than 200 countries (I am rounding here).
This ranking needs both clarification and per capita data.

Surprised other cities like London Paris or NYC don’t have more than Tokyo. Is it because Tokyo is bigger than them (geographically and population wise?)

This is not surprising.
You’re bound to get something this kind of result when you have a city with large population + culture obsessed with artisanal culture and service + big business/cultural visibility.
From hole in the wall to franchise restaurants, the culinary experience in Japan stands out from the rest.

Amsterdam has 23 michelin-starred restaurants on less than 1 million inhabitants. That’s a much higher ratio than Tokyo.

Osaka having more than New York is really telling the story.

To me Nara is far more impressive. less than 400k inhabitants and 21 michelin star restaurants is a crazy share!
