      I love colcannon, my English daughter loves it too. This looks great. Just about the right amount of butter! Dunno why it’s so comforting.

      I sometimes mess with it a bit if we are having guests. I really finely slice the kale, or cavolo nero, finely chop some red onion and garlic, flash fry those to get some decent colour and flavour. then mix it into the mash.
