Ich buche einen Sitzplatz für eine ICE-Reise. Ich möchte darauf achten, dass ich in Fahrtrichtung schaue, denn wenn es umgekehrt ist, wird mir schwindelig. Ich verstehe, dass der dunklere Farbton auf jedem Sitz dort ist, wo die Rückenlehne ruht. Aber woher weiß ich, in welche Richtung der Zug fährt?

You don’t. And depending on the trip, the direction of travel can change. I recommend taking dimenhydrinate before your trip.

You can check vagonweb, it mostly works for me. Have in mind that at some stations the train change directions (like Leipzig or Muenchen Hbf). But vagonweb also shows that.
I sincerely wish this was noted when booking seats.
