If you want something authentic than you might already found the best piece with the Palästinalied from Walther von der Vogelweide. Finding older authentic songs where we know the music is difficult.
If you want something fun but not authentic there is a whole genre of pseudo-medieval rock bands. There is an active medieval market scene in germany and those bands tour regularly. If you like beer and a relaxed and nerdy atmosphere than this is for you.
BTW the song Under der Linden is basic ai slop. Even the name is wrong.
It would be „Unter den Linden“ in correct german.
