There’s a lovely waterfall just north east of Kritou Tera. Small car park atop the hill and a very pleasant walk down.

I would add “Teichia tis Madaris” due to its unique rock/mountain formations and the amazing viewpoint at the top.

This is a very good idea, but at this stage it looks to be very barebones. Almost everything on the map is things that someone can find on a regular map (like cities) or most tourist guides (mainstream sites, villages, beaches). I think the map has potential if it highlights less mainstream spots or specific things someone might not come across easily. The festival idea is pretty good in that regard.
Besides that, there are also some odd features like the Lefkara festival (which one, by the way?) being in the middle of the sea, or villages being listed among cities. I think the latter ought to have a distinct category for people who look for a more rural/traditional retreat rather than larger/touristic villages and towns or cities proper.
It is also good to actually mention on the map what is there to see in each location (especially cities). Someone seeing the map – even with your added text from your descriptions – might not exactly „get“ why they should visit some location. Plus some specific monuments or sites are worth pointing out. For example, the painted churches of Troodos are literally listed by UNESCO as world heritage sites, but they are not explicitly shown on the map.
While i know people might not like this, but do you think you’ll make something like this for the north too?
